A snacking kind of night September 9, 2008
All I wanted to do tonight was snack on everything and anything. Before I left for volleyball practice I had a plum…it was not good at all.
When I got home I had a handful of Annie’s cheddar crackers and a handful of dark chocolate chips.
For dinner I made the spinach pizza I got from Trader Joe’s…OMG they were so good and only 140 calories per pizza. I had two of them! I also made some zucchini and spinach. There was corn in the fridge that needed to be cooked, so I boiled it…but I didn’t end up eating it, it was gross!

I didn’t do a good job keeping track of what I ate over the long weekend. But I did have a lot of fun and drank and ate A LOT. So I’m just gonna start over with yesterdays food.
Breakfast: Peanut butter banana smoothie
Lunch: 2 Homemade veggie rolls
Snack: Figamajigs
Dinner: sweet potato with black beans, salsa, yogurt and hot sauce. cheese veggies. 3 vodka and diet 7up
Long nice weekend ahead August 28, 2008
I have decided to take tomorrow off of work for a “mental health” day…basically to get a 4 day weekend. Whoo hoo!! I probably won’t be posting dinner tonight, so I’ll tell you what the plan is….flatout pizza and a salad. I’ve never made a pizza on a flatout wrap so hopefully they turn out good. If I get a chance I’ll post the picture tonight.
This weekend is going to be a very busy one for us. Saturday is my future father-in-law’s birthday and Sunday is my nieces birthday. Hopefully I can keep my eating and drinking under conrol and not eat so much birthday cake.
Ok so on to lunch…I had another great sandwich, same as I had the other day.
- Oroweat light bread
- laughing cow cheese
- spicy mustard
- turkey
- jalapenos
On the side I had an apple (saving it for later), Fage 2% (saving for later) and my left over soybeans from last night.
Edit: This was the first time I had tried the Fage 2%…I normally buy the 0% but they were out. I didn’t like the 2%, I ate about 75% of it though. I will not be buying this one again. I’m sticking to the 0%.
Tuna salad August 27, 2008
I got my shot and it didn’t hurt at all, but I have to go back in 2 days to get it checked…what a pain in the butt. For lunch I had a simple tuna salad with cucumbers, olives, red onion and a string cheese. I also used a few sprays of Italian salad spritzer. Before spinning I’m going to eat my Luna bar.
My mom decided that she wants sushi instead of mexican food tonight. Whooo hoooo! I never go out for sushi because Mike doesn’t like it. So that is pretty exciting!
On my own August 27, 2008
I ended up getting home a little later from practice and of course I was starving when I finally got home. Mike wasn’t going to be home till later on, so I was on my own for dinner. I decided on dijon crusted tilapia with a little tartar sauce on the side, zucchini and squash, and a big sweet potato with salsa, little bit of mexican cheese and hot sauce. It was really good and very filling.
While making dinner I snacked on some Annie’s cheddar crackers.
and Mike and I shared a Jack Daniel’s Downhome Punch (no pic). I’d rather have a Jack and Coke but these aren’t too bad and they only have 170 calories.
Huge taco salad August 26, 2008
When I got home from volleyball practice I was starving, so I wanted to make something quick. Taco salad it was…my salad consisted of:
- romaine lettuce
- fat free refried beans
- 93/7 ground beef with 30% less sodium taco seasoning
- red onion
- green bell pepper
- olives
- jalapenos
- little bit of guac and sour cream
- mexican blend cheese
- crushed up taco shell
- taco bell sauce on top (best sauce ever)
While making dinner I snacked on some cucumber and hummus.
and of course I had an ice cream after dinner…but why I do not know, I was still full from dinner. Seriously I need to stop buying these or have some self control. But they are just sooo good.
What a snack… August 22, 2008
Well my snack was more like a desert. I absolutely love this combo…Fage 0%, with a ripe banana and dark chocolate chips.
